Our mission with eel
We serve fresh eel.
We receive carefully selected high-quality eels from all over the country through direct distribution from the central wholesale market on a daily basis.
Our mission with rice
Everyday we only wash the rice we will use, and each time we cook it deliciously.
We have made a special contract with farmers in Nagano Prefecture, and they grow high-sugar content rice that complements eel. We purchase this rice in its brown rice form.
Our mission with sauce
A gem of a sauce made in the traditional way
We are a young shop, but this masterpiece has been meticulously aged by a craftsman with forty years of experience in this field.
This is an exceptional product made by combining naturally brewed soy sauce aged in cedar barrels with traditional aged soy sauce. It has been carefully aged with high-quality mirin and natural sea salt.

Our eel dishes come with locally sourced ingredients, including Japanese pepper from Kochi Prefecture, Wasabi from Azumino in Nagano Prefecture, and Kyoto’s pickled vegetables called Nara-zuke.
Carefully marinated by skilled craftsmen, by eating traditionally made Nara-zuke, you can efficiently absorb abundant vitamins and calcium, which helps to activate the stomach’s functions.
- Try a sprinkle of Japanese pepper. The aroma is refreshing like a green lemon, and of course, you can also enjoy the distinctive tingling sensation of Japanese pepper.
- In addition, try a single pinch of Wasabi with your dish. The flavor of the eel will be drawn out a step further. Please give it a try once.
